Like Authentic Food From India? Here is a Cookbook Review For You!

It’s hard to find a really good cookbook for preparing authentic classic meals from India, but after years of searching, I have finally come to the conclusion of my favorite one. So, I’d like to recommend this book to you with a caveat, I am coming over for dinner if you plan to make any of the great dishes inside:

“Flavors of India - Classic Dishes and New Discoveries” by Madhur Jaffrey; Published by Carol Southern Books, New York, NY (Division of Crown Publishing) also available from Random House and BBC Books; 1995.

This awesome cookbook has been translated into 14 languages. And it has sold millions of copies in some 43 countries. I believe it is one of the best cook books of Indian Cuisine I’ve ever read, and as a lover of authentic food from India, I own my fair share of such cook books. First, I recommend that the cook who’ll be using this book to make expert dishes learn about all the special ingredients, and you’ll find no less than 20-pages of special ingredients, I use about 15 and have them in my pantry for Indian dishes.

Also, once you learn the techniques and buy a couple of pieces of kitchen equipment items, (discussed in the book) you’ll be able to prepare classic dishes and with almost unlimited variations of such meals as Kerala, Goa, Punjab, Gujarat, and there are great sections inside on Tamil Nadu, and West Bengal. If you are a serious chef or just a wannabe amateur like me, you’ll love it. It’s awesome.

Here is an update about the top 3 popular and highest selling cars in India:

The Ambassador

The Ambassador manufactured by Hindustan Motors started way back in 1950’s. It is still one of the most popular cars that people favor. Being extremely stylish along with an awesome mileage of 16 kilometers/ liters of petrol gives it a competitive edge. The car has an awesomely designed interior with large leg space and a comfortable space for 3-4 at the back. However a price range of Rs 5 lakh (USD 10,500) and above is not a comfortable margin for the common people. Presently the car is only available with manual gears.

Hyundai Santro

Hyundai is comparatively new company who entered the Indian market. The Korean market leader entered Indian markets in 1990’s with the sensational launch of Hyundai Santro. It received phenomenal success and was the highest selling car for consecutive 3 years. It has a look of the modern hunchback and was considered as family. Amazingly it used to give a mileage of 16 kilometers/liters inspite of having an engine of 1200 cc capacity. The car was also expensive at the first but lowered its prices due to fierce competition from the Hindustan Motors and Maruti Suzuki, the then market leaders.

Maruti Alto

Maruti group started their operation in India in the late 1970’s and merged with Suzuki group of Japan. They were leading the market until the arrival of Suzuki who acquired a considerable amount of market share with its launch. Maruti then launched its most famous car Alto in 2005 who swept the current Indian market. The car was cheaper than any other cars presently operating on road and yet provided a fine performance. With an awesome mileage of 18 kilometers/liters and an engine of 800 cc with its extremely stylish interiors and exterior it is still the most favorite car of the Indians on road.

Nah! It isn’t raking moolah in the call centers and hitting a mall for a shopping spree for it involves working at the odd hours. It isn’t being a politician either, for one has to deal with tormenting troubles of swaying the other parties off the feet. It isn’t being a property dealer even if one has inherited acres of land the moment he docked out of his mother’s womb. For one will have to grease the palms of babus to shun a project, pay goons to extract money and fight cases in the court. After all, one may never know the gestation period of a court case in India.

A corporate honcho has to spend hours reasoning out the effects and side effects of a decision and a homemaker has to hop with the pace of a toddler to feed her kid. The easiest job is one such which poses no problems, free from worry or anxiety, marked by moderate steepness and without any hardship. The easiest job is one such where one can put a no-show anytime, where there is no authority to scrutinize, where the clientele don’t care a boot about the work done and where one gets paid for gluing himself to the chair. A hard slap on the Indian development index it may be, brutal truths are truths anyways- being a government teacher!

You teach the poor, the Poor’s knowledge is poor, the Poor’s expectations are poor, the poor won’t subject your work to investigation, the Poor’s parent won’t crib about the bad handwriting and hence you can teach the poor the poor way. Everlasting license for lame teaching granted!

There is no sense in cultivating guidance to the destitute as they themselves aren’t there to learn. See, you allure them to the mid- day meals and what better way for the pauperized to get rid of the burdensome duty of stuffing the bellies of their children with food.

A horrific reptile once in a while in the khichidi is no harm. It’s free food and anywhere out won’t be any better either.

Do the preachers of wisdom care a hoot? Nah again! Why should they? Had it been a boss at a corporate office, one would switch off the lights not in use, one would come up with innovative ideas, one would work late hours, and one would pretend working in a team. Who knows- what and when the boss notices the extra efforts? A government teacher-ha! Bribe the peon simply for some hundred bucks and he will let you know when the authority is coming for a check. Lick the boots of officials; make a child recite a patriotic poem, make the other one sing Jai Ho and see, how super-excellent you are at your work. Promotion granted. Work done. Easy.

An average government teachers get paid 10,000-15,000 bucks as a novice, a post-graduate degree in hand and it can be anywhere from 25,000 to 50,000. Undoubtedly, more desirable than working from nine to six, eight to two is more fitting with absentism at one’s own whims. Jai ho for the so called teachers.

So far, in the history of India, teaching in the villages is one of the major occupations for which we have not yet developed tools that make an average person capable of competence and performance. And who wants it? For if the poor is not poor in knowledge, awareness steps in. Awareness is bothersome, ignorance is painless!The job is undoubtedly easy

The Tiger is recognized as one of the big 5 cats. The list is headed by the Lion which is closely followed by the Tiger. Generally male tigers are about 9′ in length and could have an average weight of 400 lbs. The measurement of length is from the nose to the tail. Female tigers are slightly smaller in size and weight. Till about 100 years back the tiger was in abundance all over the world and thousands roamed the areas of Asia, India and Africa. However indiscriminate hunting and destruction of its natural habitat has reduced the tiger population to a pittance and has become an endangered species. In case this species is not looked after there is a good chance that the tiger will remain only in photographs.

India holds pride of place as far as tigers are concerned. The Cat Specialist Group has estimated that nearly two thirds of all the worlds’ tigers are concentrated in India. India has been home to the tiger for as long as Indian history. The Indus valley civilization which thrived nearly 4500 years back has clear reference to the Indian Tiger. A seal with a tigers head is proof enough that the tiger as a wild cat flourished at that time. Even earlier about 5000 years back the rock paintings of the Warli tribes in Thane show the existence of the tiger.

The Indian Tiger also referred to as the Bengal Tiger has pride of place in the list of tigers. Panthera Tigris Tigris is the name given to the Indian tiger by zoologists. The Bengal tiger is also referred to as the Royal Bengal tiger because of its majestic appearance. The Bengal tiger is a carnivorous animal. But sometimes it can turn into a man eater. Tigers generally are not man eaters, but an injury or a provocation can lead a tiger to become a man eater. The tiger in India is a protected species, but the sad part is that as per the last tiger census conducted by the Indian Government ,only 3846 tigers were counted. But experts have questioned the method of conducting census of the tigers by the Indians which they feel is not scientific. Indian censuses of wild tigers are carried out by identification of footprints also referred to as pugmarks of individual tigers. For this identification an expert tiger tracker is a must. However experts feel this method is not accurate.

With the Tiger population dwindling the government and wild life enthusiasts launched ‘Project Tiger’ to help the species from becoming extinct. But the launch of ‘Operation Tiger’ for the conservation of the tiger is at least 3 decades late. Prior to this the Maharajas carried out extensive shootings of the tiger to satisfy their ego. Big tiger shoots were organized to please the British rulers as India was a colony at that time. The Bengal tiger has been part of folklore in the tales written by Jim Corbett. He shot hundreds of tigers but regretted it in later life and became a tiger conservationist. The Corbett national park is named in his memory in Western Utter Pradesh.

One of the most famous reserves for the Tiger in India is the Smlipal reserve in the state of Orissa. Here the thick jungles give ample cover to the tiger. The melanistic or black tiger is a rare color variant of the tiger and is also supposed to be alive in this reserve albeit in very scanty number. The white tiger also a rarity is only found in India in Rewa in Madhya Pradesh. As things stand the tiger is an endangered species and it is incumbent on all wild life enthusiasts to help save the tiger and its habitat. This magnificent animal cannot be relegated to the dustbins of natural history.
